Classic Cajun recipes are combined with fresh ingredients and modern twists to give the cook a wide variety of recipes that will bring the cuisine of Louisiana into the kitchen. The book begins with what the author considers staples or essentials for Cajun cooking - such as remoulade sauce and fry mix. The recipes are divided up by meal types and include Happy Hour and Small Bites as some of the categories. Each recipe is accompanied by one or more photograph. 

This cookbook was a delight to look through and use. The recipes are well laid out and the instructions are clear. I'm an amateur cook at best and feel very confident that I could easily make any of these recipes, despite some of them having a long list of directions. The recipes I did try came out really well and were delicious. The photography was spectacular and really brings out the essence of the cuisine. Overall, this is a great cookbook that I intend to use more of in the future and am considering purchasing for a gift.
